...and the changes continue!

I'm so happy! I have done great things this week. I feel like a brand new person, a person that is actually following her joy and achieving her goals! These past two weeks I have been almost 100% organic and I have cut down my meat intake to 15% with half portions because I'm already getting tons of protein from other sources. My body is responding so wonderfully to this new change, so wonderfully that I have lost 9 lbs in 2 weeks without starving! I have eaten whenever I wanted to but I have eating good nutritious foods! I have walked 2 miles every single day and I feel so full of energy! I wake up very early, I drink my water, get ready, take a 2 mile hill walk, come home, drink more water, take a shower, eat some fruit, start work and then have a small breakfast.

I don't know if it is that because the food is organic it really nourishes you, so well that you don't get hungry that often! I have not snacked in a while and I don't even crave junk food anymore, as I said, I feel like a brand new Angelgaia. I can do anything I set my mind to! I'm invincible and I love myself so much!

The other day on one of my walks I felt so in-tune with nature-god-goddess that I said, from my heart and with great intention... "I LOVE MYSELF", this is a huge achievement and it took me a while to understand this but I finally have and it feels great. I am genuinely happy. I just can't stop smiling, I wanna hug everyone! Thank you Universe, we rock!

Oatmeal-Flaxseed Cookies!

Hello!

So, yesterday I experimented with cookies! I have never EVER baked cookies from scratch and thought it was about time to do it!

Here is the recipe of my personal oatmeal-flaxseed cookies! Enjoy!

Ingredients:

2/3 cup butter, softened
2/3 cup packed brown sugar
2 eggs
1 1/2 cups rolled oats
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
2/3 cups dried cranberries or raisins
1/3 cup shaved Almonds
1/8 cup flaxseed

Directions:

Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time. Combine oats, flour, salt, and baking soda; stir into butter mixture one cup at a time, mixing well after each addition. Stir in raisins, almonds and flaxseed. Drop by rounded teaspoons onto ungreased cookie sheets.
Bake for 10 to 12 minutes in preheated oven, or until golden brown. Cool on wire racks.

Organic Explorations!

Hello!

I'm so happy! Oh so HAPPY! I have finally switch to ORGANIC! I now have 85% organic products in my house! I am 95% HFCS free! I am 100% MSG free! ...and I can't wait until I'm 100% on all!
In turn I feel better in my body and I have lost 3.5 lbs in 5 days!!!

So I decided that I want to eat all vegetarian today and I was craving some hummus but I did not have garbanzo beans... I checked online for a black bean hummus recipe and could not find one to satisfy the ingredients I have at home! One of the main ingredients in hummus is Tahini and I don't have any... in fact... I have never used it!

So I went ahead with my culinary instincts and it worked!
Check out the pictures and the recipe I created! So divine!!!




Almost Black Bean Hummus (no tahini required)

1 Can of your favorite Black beans
1 Clove of Garlic cut in pieces
1 tsp of Salt (however much or less you like)
1 tsp of Pepper (or as your palate dictates)
1 tbsp of lime juice or half a lime squeezed
1 dash of cumin
1 dash of dried parsley

Drain the black beans in a cup to save the liquid which we'll use later. Add all ingredients to a blender/magic bullet. Blend for a few seconds and add 1/2 of the black bean liquid and then blend again. once it turns in to dip-like consistency then serve.

*Make it your own! Add 1 tbsp of Extra Virgin Olive Oil or add some tahini!

Serve on a pita/tortilla, cubed tomato, your favorite sauteed vegetables, organic spinach and organic salsa.

This can also be a dip to eat with organic tortilla chips (get a huge bag at Costco for $5) or carrots & celery!

Being.



"What is the intention of this blog"?, I keep asking myself... and I honestly don't exactly know. Could it be just a new phase? A new hobby? A hidden desire to express myself?

Uh-oh writer's block...

I have never been able to keep a diary. I have about 6 or 7 notebooks that I always mean to use and I never do. I'm really good at thinking, but when it comes to writing I don't know why it's so hard. I guess it feels more concrete and more "real" than thinking. Kind of like the way you limit yourself when interACTING with others instead of just "doing it"... being YOURSELF.

I had a conversation with a friend of mine that has been guiding me spiritually, she is wonderful and we'll call her Master P (lol not the rapper...a spiritual master); we were talking about me dividing myself into little angelgaias and being a different angelgaia with different people and how this limits my true potential.

I want to collect my parts and just be my COMPLETE SELF with everyone. It is a difficult task... or as difficult as I think it will be. I LOVE my whole SELF, I would be friends with me and I need to give myself a shot at being me 24/7, no matter what... I guess the difficult task is over with... I accept and love the sum of ALL my parts... I just have to share it. So here is to being my COMPLETE SELF! Cheers!
